    Whenever I go to the supermarket I am always amazed at how much of the meat display sections are devoted to sausages. There are all kinds of “hot dogs” and fresh sausages made with pork, beef, chicken, turkey and so forth. There is kielbasa, various wursts, andouille, linguica, mortadella and on and on. In addition, there are dried and salt cured sausages like salami and pepperoni plus jerky and prosciutto, not to mention the popularity of the smoke houses (sausages like Harrington’s) and the busy hot dog stands like Nan-Z and Hound Dogs in Manchester.
